歴史

タンドリーチキン発祥の店でもあるモティ・マハル（英語版）の創業者である[7][8][9][10][11][12]、Kundan Lal Jaggi、Kundan Lal Gujral、Thakur Dassの3名によって[13][1][14][15]1950年代に[1][2]開発された。残り物の鶏肉をバターとクリームをたっぷり入れたトマトグレービーソースと混ぜることにより、偶然できたレシピである[16][17][14]。
作り方

鶏肉は、レモン汁、ヨーグルト、スパイスに数時間漬け込む。スパイスとしては、ガラムマサラ、ショウガ、ニンニク、コショウ、コリアンダー、クミン、ターメリック、トウガラシを用いる。

この鶏肉を伝統的にはタンドールで調理するが、グリル、ロースター、フライパン等を用いることもある。これをバターを含むマイルドなカレーソースに入れて提供する。ソースの材料やスパイスには様々なバリエーションがある。スパイスとしては、カルダモン、クミン、クローブ、コリアンダー、コショウ、フェヌグリーク等を用いる。ソースにクリームを混ぜたり、飾りとしてかけたりもする。濃度を高めるためにカシューナッツのペーストを加えることもある。
